Cooking class “The Sun”

  • Bruschetta garlic, tomatoes and basil (and strongly flavoured mature ricotta cheese)
  • Fried aubergine-balls
  • Potato pitta with onions
  • “Muersi” with turnip tops and peas
  • Orecchiette pasta with “scattarisciati” tomatoes, rocket and pine nuts
  • Timbale of potatoes and artichokes
  • Chicory cream
  • Almonds paste sweets

Cooking class “The Earth”

  • Pittule alla pizzaiola
  • Mashed white broad beans and wild catalogna chicory
  • Parmigiana(aubergines quiche)
  • Sagne (home-made fresh pasta) with a fresh tomato sauce, cacio ricotta cheese and basil
  • Lamb chops with almonds and hot turnip tops
  • Caramelized peppers
  • Courgettes "alla poverella"
  • Lemon ricotta cake

Cooking class “The Wind”

  • Pittule with cauliflower
  • Octopus-balls
  • Crostini with mashed broad beans, pecorino and mint
  • Risotto with fish
  • “Ciceri e tria”
  • Seabass
  • Chicory cream with fresh bacon
  • Ratatouille with aubergines, peppers and courgettes
  • Pasticciotto, Salento traditional cake

Cooking class “The Sea”

  • Pittule with squid
  • Gallipoli prawns with Kadaifi pasta
  • Anchovies and courgettes quiche
  • Taieddhra
  • Beans and clams cream with rosemary
  • Spaghetti with squid ink
  • Octopus
  • Mussels
  • Pasticciotto, Salento traditional cake

Duration: 3 hours (morning / afternoon).

Final lunch / dinner with all participants.
